EASY KETO EGG SALAD

ingredients

  • 1 Avocado, moderate
  • 1 Tsp Dijon Mustard

  • 1/8 Tsp Dill (optional)
  • 1/2 Tbsp fresh chopped parsley (optional)
  • Salt and pepper, to taste

Directions

  • Cover the eggs with water in a saucepan. Bring to a boil, turn off heat, cover and break in water for 10-15 minutes. (less or more centered on taste )
  • Run under cold water and peel cubes
  • Insert the eggs into little pieces, sprinkle with pepper and salt, set aside
  • Mash avocado and sprinkle with pepper and salt
  • In medium bowl, combine mayo, lettuce, carrot avocado, avocado, lemon juice and selection of herbs
  • Chill and serve
