ingredients
- 1 Avocado, moderate
- 1 Tsp Dijon Mustard
- Splash of lemon juice (to stop avocado browning)
- 1/8 Tsp Dill (optional)
- 1/2 Tbsp fresh chopped parsley (optional)
- Salt and pepper, to taste
Directions
- Cover the eggs with water in a saucepan. Bring to a boil, turn off heat, cover and break in water for 10-15 minutes. (less or more centered on taste )
- Run under cold water and peel cubes
- Insert the eggs into little pieces, sprinkle with pepper and salt, set aside
- Mash avocado and sprinkle with pepper and salt
- In medium bowl, combine mayo, lettuce, carrot avocado, avocado, lemon juice and selection of herbs
- Chill and serve
