Keto Meatloaf Stuffed with Cheese


Flavorful chorizo combined with ground beef produces this cheese filled keto meatloaf flavor amazing! A low-carb meal recipe that is great!




This keto meatloaf recipe was the brainchild of getting a few chorizo from the fridge that had to be utilized. I'd purchased ground beef for meatloaf, but it was not likely to be this meatloaf that was remarkable. It was likely to be dull meatloaf. I am happy I had a favourite along with that chorizo since this is amazing!

I filled this meatloaf using cheddar cheese that advertisements to the wow factor once you cut into it! Once I pressed half the meatloaf mix into the pan, then I used a block of cheddar cheese that was mild and ounces of it cut and set it down the centre leaving about an inch on each side.

Ingredients


  • 1 pound Ground beef (I used 80/20)
  • 1 pound Earth Chorizo
  • 1/2 tbsp Garlic powder
  • 1/2 tbsp Onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 6 ounces moderate or sharp cheddar cheese block, cut into chunks


Directions


  • pre-heat oven to 350F
  • Mix all ingredients, except cheese and salsa, together in a large bowl
  • Add a portion the meatloaf mix to a loaf pan and press to the bottom (in case you do not possess a loaf pan large enough, then you can shape the mixture into a loaf shape onto a sheet pan)
  • Set the cheese to the middle of the skillet, leaving about an inch on either side.
  • Insert the remainder of the meatloaf into the pan and press down it to compress it slightly.
  • Bake in the oven for 45 minutes or until an internal thermometer reads 165F
  • Remove from oven and let sit 10 minutes. Serve with salsa.

  • To get 1/6th of recipe: 532 carbs / 38.9grams fat / 7.4 carbohydrates / .8g fiber / 36.2grams protein
  • If you aren't that keen on chorizo, simply use more ground steak or perhaps floor pork!
  • You can use mild cheddar, sharp cheddar, or moderate cheddar. Whichever you prefer
  • Do not over work the meatloaf mix or your own meatloaf will be dumb.
  • Working with a loaf pan aids the meatloaf maintain its shape. You might shape it onto a foil into a loaf shape.
