Paradoxically, I truly did not have to do much. It's, if it seems familiar - I swapped 1 ingredient out in my coconut biscuits and voila- A different flavored and textured cookie!
Fool or I am not going to feign you into believing my home no coconut snowballs are something like the ones that you'd find at dessert stores or bakeries. Those biscuits are traditionally dependent on the key generic cookie ingredients (butter, many kinds of sugars etc), however, mine includes none of the - It is only two kinds of coconut (shredded/desiccated and milk! ) ) , together with some granulated sweetener that is sugar free!
Sugar, no milk, or milk needed.

INGREDIENTS
- 4 cups shredded coconut
- 1/4 cup granulated sweetener of choice that I utilized monk fruit sweetener
- 1/4 tsp vanilla or vanilla extract discretionary
INSTRUCTIONS
- In food processor or a blender, add your coconut and mix until a texture that is nice. Don't over blend you'll be left with butter.
- Wet your hands and shape the batter. Place on a baking tray or plate. Press each ball. Sprinkle with additional coconut or granulated sweetener (that is what I used) and wash until they firm up slightly.
NOTES
