Ingredients

  1. 8 bell peppers removed
  2. 1/2 tablespoon olive oil
  3. 1/2 pounds ground beef
  4. 1 tablespoon taco seasoning spice mixture
  5. 3 tablespoons water
  6. 1/2 cup shredded cheddar cheese optional omit for paleo
  7. 2 tablespoons olive slices that are black
  8. 1 tablespoon chopped fresh cilantro *optional

Directions

  1. Preheat oven and line a baking sheet with aluminum foil.
  2. Slice each pepper lengthwise Remove seeds.
  3. Drain beef and come back to the skillet. Stir in water, tomato sauce, and taco seasoning mix. Cook over moderate heat 5 to 10 minutes, stirring periodically.
  4. Bake.
  5. Remove from oven.
  6. Top each with a teaspoon of sour cream that is sour and function.
