MONTEREY CHICKEN {KETO / LOW CARB}

I recall years back loving the Monterey Chicken in Chili's Bar & Restaurant Grill. They shot it and it's been a distant memory. I've thought about building a friendly version this season since beginning Keto. In reality, I did post a crockpot version of the recipe that is carb.

Ingredients

  1. 2 tbsp butter
  2. 1 tbsp olive oil
  3. 1 pound of lean cut boneless skinless chicken breasts
  4. 6 tbsp bbq sauce
  5. 1/2 tsp garlic powder
  6. 1 tsp parsley
  7. 1/4 tsp pepper and salt

Directions

  1. In a sexy skillet, then add olive oil and butter.
  2. Season chicken generously with garlic powder, and salt, pepper.
  3. Sear chicken on medium/high on each side for approximately 4 minutes per day, then reduce heat and cover with a lid.
  4. Simmer until chicken is cooked all of the way through.
  5. Divide the bacon and put on top of each chicken breast.
  6. Sprinkle cheddar cheese on top.
  7. Finish the chicken off together with Monterey Jack Cheese and sprinkle on top.
  8. Broil for 2-3 minutes until cheese is bubbly and melted. (make certain skillet is oven safe)
