MONTEREY CHICKEN {KETO / LOW CARB}

I recall years back loving the Monterey Chicken in Chili's Bar & Restaurant Grill. They shot it and it's been a distant memory. I've thought about building a friendly version this season since beginning Keto. In reality, I did post a crockpot version of the recipe that is carb.
Ingredients
- 2 tbsp butter
- 1 tbsp olive oil
- 1 pound of lean cut boneless skinless chicken breasts
- 6 tbsp bbq sauce
- 1/2 tsp garlic powder
- 1 tsp parsley
- 1/4 tsp pepper and salt
Directions
- In a sexy skillet, then add olive oil and butter.
- Season chicken generously with garlic powder, and salt, pepper.
- Sear chicken on medium/high on each side for approximately 4 minutes per day, then reduce heat and cover with a lid.
- Simmer until chicken is cooked all of the way through.
- Divide the bacon and put on top of each chicken breast.
- Sprinkle cheddar cheese on top.
- Finish the chicken off together with Monterey Jack Cheese and sprinkle on top.
- Broil for 2-3 minutes until cheese is bubbly and melted. (make certain skillet is oven safe)
