Ingredients

  3. 1 cup almond milk
  4. Pinch pepper & salt
  5. 2 oz colby jack cheese lean cubes (along with your choice of cheese)

Directions
  1. In a microwave safe bowl, then add mozzarella and cream cheese.
  2. Microwave for 30 minutes at a time until cream cheese is mozzarella and soft begins to melt.
  3. Mix well! And by stir stir stir! You need this combined.
  4. Combine beaten egg and almond milk. Add cheese mixture and blend well REALLY.
  5. Dough may be tacky, this is fine. Dust it with milk that is extra and form into a ball.
  6. Cut into segments to form 6 " balls, based on how big the sausage.
  7. Place sausage onto the dough, dough balls, then wrap and cheese dough around.
  8. Place to a greased muffin tin.
  9. Bake for 12-15 minutes until set and golden. Top with mozzarella if wanted.
