EASY KETO PUMPKIN MUFFIN MINIS

It took me longer to determine than it did for me to produce the recipe, what to call these. These can readily pass for Pumpkin donut holes so call them what you would like, either waythey are yummy.

INGREDIENTS
- 2 1/2 cups Today Foods flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3 1/4 tsp Pumpkin Spice
- 2 Eggs
- 1 tsp Pure vanilla extract
- 6 tbsp Kerry Gold butter out of cows
INTRUCIONS
- Preheat oven to 325 degrees F. Lightly grease a miniature muffin tin.
- In a big bowlcombine the milk, baking soda, salt, and pumpkin spice. Stir until well blended.
- In a medium bowlcombine pumpkin puree, sugar-free maple syrup, the eggs, coconut oil, and vanilla. Stir until smooth. Insert this egg mix and stir till blended.
