- 1/2 pounds Ground beef
- 1 tablespoon shallot minced
- 1/3 cup Low-carb salsa
- 1 tablespoon coconut oil
- Salt and pepper to taste
- Beef taquitos
INSTRUCTIONS
- Heat coconut oil in a pan, add shallot and simmer for two minutes, then add beef, cook for 3-4 minutes, then stir in pepper, chili flakes, garlic powder, salt and salsa. Cook for 10-12 minutes on low.
- Mix split this mixture and then cheddar mozzarella and cheese in a bowl. Put shells and bake for 5-7 minutes.
- Let cool for a minute, add two tablespoons of beef mixture and roll. Serve immediately, topped with sour cream (optional).
