Italian Sub Roll-Ups {grain-free; low-carb; keto}
With the accession of keto within our own lives has been a struggle. We have had to be more creative with all our foods, and once I need a sandwich that is gluten-free these days are an alternative. I got a lettuce wrap stuffed with deli meats and stopped by a sub store from despair one day. I had been hungry, although it was meh.
My sub sandwich has always been a Italian sub. Something about that mix of legumes and provolone using a simple oil and vinegar is simply ideal. And I don't have any guilt and can eat it any day of the week it fits in perfectly with my keto requirements.
High Keto sub-par lunch together with 10g of protein 20g of fat and less than 1 carb. The fantastic lunch that is Keto.

Ingredients
- 4 Slices Mortadella
- 4 Slices Sopressata
- 4 Slices Pepperoni
- 4 Slices Provolone omit for Alternative
- Paleo Lime Mayo or mayo we adore Chosen Foods Avocado Oil Mayo
- Shredded Lettuce
Extra toppings if desired, our favorites include roasted red peppers, jalapeƱo peppers, banana peppers, and olives

Directions
- Layer the meat pieces.
- Spread a thin layer of mayo making sure to leave area on peak of the bit out of squishing out once you roll up them, to keep it.
- Add a piece of provolone about halfway out of the top.
- Have the toothpicks ready and nearby to catch. Beginning from the base of the cheese, lightly (but as closely as possiblroll the pile, pushing in almost any fillings which find their way outside.
- Fix the meat borders, when you reach the finish.
- To serve, pour two parts oil and 1 part vinegar. Sprinkle a few seasoning. Dip the roll-ups from the oil/vinegar and revel in!
- Store extras from the refrigerator, wrapped in plastic wrap, for up to a week. These make for school lunches that are effortless and tasty.
